Preparation and Evaluation of Physicochemical Characteristics of o/w Microemulsions Containing ¥â-Carotene

Abstract
The o/w microemulsions containing ¥â-carotene were made from 3 or 5% w/w oil(soybean oil, cottonseed oil and isopropyl myristate) and 15, 20 or 25% w/w nonionic surfactant (Cremophor EL, Cremophor RH 40 and Brij 97/Pluronic F-68(2:1 w/w). They are characterized by particle size distribution, surface tension and viscosity. Also, stability study was done by antioxidant, long-term storage for 6 months.
